RUSTIC PATRY PIE (BOUGATSA) REMAINS POPULAR IN INSTABUL AND SMYRNA...
Bougatsa - rustic traditional special pastry, favorite flavor of children and adults, is accompanied by a story that is hard to imagine that begins as old. Years pass and pies remains popular in Instabul but also in Smyrna. Etymologically, the pies are a corruption of the Ottoman word pogatsa, meaning stuffed with cream poured over with icing sugar or pie stuffed with cheese.
The PASTRY pies dominated in Greece after the Asia Minor catastrophe from northern Greece IPIROS and from the Peloponnese to Crete. But especially as naturalized Serres in northern Greece where housed many refugees from Asia Minor.
The pastry pies are second in popularity and Thessaloniki all these years. In 1917 founded the cooperation of pastry pies in Thessaloniki and two years after gathering 51 members, number not insignificant.
After 1922, the spread of pastry pie (bougatsa) in Greece accelerated and the art of evolving. Today, despite its great history, the cream pie is still a daily desired dish with loyal fans and, it seems, the future will be great as the flavor is.
